Simply Homemade: Tortellini Salad

Get ready for another ridiculously easy and versatile recipe! My family has made so many variations of this pasta salad and every one of them has been delicious. I won’t bother with posting the hundred or so different “recipes” but I will tell you some of the ideas to change it up. This recipe is a great transitional food as we move from summer to fall since it uses fresh produce but also some hearty pasta. Love love love!

I am not entirely sure of the origins of this recipe within my family but someone brilliant found a version of this, made it, and shared it with the rest of us. Thanks to whoever that was because this one is a keeper! I remember the original recipe had a homemade dressing that was really good but required a lot more ingredients. Somewhere along the experimenting-with-it-way we found that Olive Garden’s dressing tasted remarkably similar. Since it just so happens that we can purchase Olive Garden dressing from the grocery store, from the restaurant, from Costco or Sams, etc we decided that was an unquestionable swap. One ingredient just replaced multiple…that, my friends, is called winning!

From there, the tweaks to the recipe were small but numerous. It called for regular tortellini but we all prefer the mini tortellini so the ratio of pasta to produce is more even. It suggested turkey lunchmeat but we all usually have rotisserie or grilled chicken on hand so we love to sub those in and leave the turkey lunchmeat for the kids’ school lunches 😉 It called for cherry tomatoes that you cut in half (I won’t lie here that takes more patience than I’ve got when I want this simple recipe). Introduce tiny grape tomatoes that you don’t have to cut or a juicy large garden tomato that you can chop way easier…voila! Another step has been simplified!

All remaining changes stemmed mostly from not having a listed ingredient on hand so subbing it for something similar. No green pepper, how about two milk banana peppers? Want this for a side salad, go with rotini noodles and no meat ingredient. Want it for a meal? Hellloooooo full size tortellini and rotisserie chicken! Too many cucumbers picked from the garden? Chop ‘em up and toss ‘em in! These are just a few of the things we have tried and I wanted to share the ideas with you so your brain gets going on how to use this recipe to your taste preference and disregard any fridge/pantry limitations!

Tortellini Salad

  • Servings: Approximately 6-8

Use this basic recipe as a guide and enjoy as-is or experiment to make it your own!

Ingredients

-9 ounce package fresh or frozen mini tortellini

-3/4 cup small grape tomatoes

-1/2 cup Kalamata olives, halved

-1/2 cup rotisserie chicken, chopped

-1/2 cup red onion, chopped

-3/4 cup green pepper, chopped

-4 ounces feta cheese

-3/4 cup original recipe Olive Garden salad dressing

Directions

1) Cook tortellini according to package instructions and place in medium mixing bowl (I would recommend rinsing with cool water to stop cooking process then draining well before putting in bowl).

2) Pour salad dressing and feta cheese on tortellini in bowl and stir to coat so they don’t stick together and can start absorbing the flavor.

3) Wash/chop remaining ingredients and put into same bowl. Mix well.

4) Can refrigerate for a bit before serving (just may need to add more dressing if it soaks into the pasta while cooking and salad appears dry). Mix and serve!

Simply Homemade: Alfredo Sauce!

Yes, I realize it’s still technically summer. No, I don’t believe delicious pasta and sauces should be reserved only for the colder months. No, I am not “technically” Italian BUT I did marry a guy who is part Italian and we had a daughter who is, therefore, some part Italian and I carried her for 9 months so I’m pretty sure that qualifies me as some fraction of Italian..am I right? Don’t answer that..

Needless to say, quite possibly my biggest weakness in life is Italian food (& drink if I’m being totally honest here because it’s no secret that I have a serious love of wine). My husband and daughter share that weakness and we inevitably enjoy some version of pasta or pizza almost every week, weather be darned 😉 I was planning to keep this recipe in my back pocket until at least Fall but I’ve mentioned it in passing and multiple people are waiting somewhat patiently for the recipe to pop up on the blog so here we are. Speaking of being at this point, I’m ashamed to admit I only recently began making and perfecting my Homemade Alfredo sauce. I was daunted by the fear of messing it up and assumed the store bought stuff would be about the same anyway. Ohhhh how wrong I was! I dare you to purchase an Alfredo sauce and heat it up the same night you try this recipe. If you (or anyone you know) prefers the store bought kind over this then we quite simply cannot be friends. Joking! A little…

In seriousness, I have to credit my youngest sister for pushing me to make this homemade. She’s a fantastic cook (shocker there, every one of my sisters has ridiculous natural kitchen talent) and she assured me that she makes it all the time and it’s so easy. I was leery but started my Pinterest recipe searching and experimenting. After a few mediocre attempts and tweaks here and there, I finally came up with the version below. I knew it was ready when my husband (completely unprompted) told me I really needed to write down an actual recipe and get this on my blog already! Did I mention how much I love this man?

My favorite version of this recipe includes the pesto and prosciutto and, if you live near a Trader Joe’s store I would highly recommend theirs (inexpensive and delicious!). My husband wasn’t too keen on just a simple Alfredo pasta because, “where’s the meat?”. I found that adding some prosciutto and decreasing the salt resulted in a much more satisfying meal. My daughter lovingly refers to prosciutto now as ‘that Italian bacon’ and her and my husband have both completed reversed their initial thoughts of ‘that green stuff’ also known as pesto. I explained that adding those cuts down on the ingredients I need for that week’s groceries and gives it the flavor they both love. Suddenly that green stuff was begrudgingly ok by them..at least for this recipe!

Oops, this post got a little lengthy, sorry about that! Once I start on Italian I just can’t seem to stop. For the sake of the recipe, I hope you made it this far or at least skipped down to the recipe and saved it to try. If summertime pasta isn’t your jam, I promise not to hold it against you but I sincerely hope you give this a shot at some point!!!

Homemade Alfredo Sauce

  • Servings: Approximately 7

What this recipe lacks in healthiness it makes up for in deliciousness and easiness!

Ingredients

-6 tablespoons butter

-1 1/2 cup heavy whipping cream

-1 teaspoon garlic powder

-1/4 teaspoon pepper

-2 1/2 cups Parmesan cheese, freshly shredded is best

-1 tablespoon pesto

-2 ounces prosciutto, chopped

Directions

1) Melt butter in saucepan.

2) Add in garlic powder and pepper and heavy whipping cream and simmer on medium heat about 3 minutes, stirring occasionally.

3) Add in Parmesan cheese and stir until melted into mixture.

4) Stir in pesto and prosciutto and keep on heat for another two minutes to warm meat and combine flavors.

5) Serve over favorite pasta or in favorite Italian dish!

Quick notes:

  • If this is thicker than you prefer, just add a little milk or chicken broth and the flavors will still be spot on!
  • If you aren’t a fan of prosciutto or don’t have it, you can add a pinch of salt instead and use this by itself or with chicken instead!
  • This is best enjoyed immediately!

Simply Homemade: Microwave Caramel Popcorn

Does anyone else have a nostalgic kind of day once in a while? That was my day earlier this week. Most of you can probably guess by now that my happy trip down memory lane was centered around family and food!!! But not just any food, my favorite food and one I have enjoyed since early childhood…popcorn! I’m not sure if loving popcorn is genetic but it has spanned both sides of my family and multiple generations so I have to assume it is 😉 Care to take a jaunt down Nostalgia Lane with me and end our journey with the deliciously simple microwave caramel popcorn recipe? Then here we go!

My mom’s dad has always had a popcorn crop on his farm and he’s experimented with growing all different kinds. Thanks to this blessing of always having the best homegrown popcorn, I was able to find my favorite and request it each time (white popcorn vs yellow is my little heart’s biggest desire). They’ve always had huge barrels of popcorn kernels in their basement and we never left their house without a container full of it. My mom has only ever popped those morsels of joy in her nearly 40 year old popcorn popper (seasoned with love and still used to this day-scroll to the bottom for a picture of this beaut). I have memory after memory of sitting on the kitchen counter as a child watching mom twirl the popcorn popper’s handle round and round waiting for the popping to start and the delicious smell to fill the room. Ending the day with popcorn has always been her way of unwinding and that may be another genetic trait passed on because I am often found doing the same!

Mom or Dad would always cut the top half off a brown paper bag so mom could pour the popped kernels in as they came out of the popper (don’t know why but she never put it in a bowl, always the bag). Mom had a knack for handling large batches where all the popped kernels didn’t fit in the popper once it started going so she had to pour the popped ones into the bag midway through the batch and keep the unpopped kernels inside to continue heating. My dad’s mom didn’t have the same twirl popper as mom, she had an air popper that we used to stare into and wait on the popped kernels to spill out of and into our hands (…and some into the bowl). She used to let us sprinkle sugar on the popcorn instead of (or in combination with) salt. Why did we want to do that? I’m still not exactly sure other than that meant we could lick straight sugar out of the bowl after we’d devoured the popcorn and what kid would turn down that chance? On rare occasions when she could corral grandpa into the kitchen to help her, they would tag-team cooking a batch of caramel popcorn for us.

Let me paint you a picture here. My dad’s dad was a solid fix foot four inches tall and a farmer through and through. Needless to say the kitchen was not his natural habitat 😉 My dad’s mom was about as opposite as could be. She was four foot eleven (& a half according to her) inches tall on her best day and I have very few memories of her not in the kitchen. In order to make this delicious caramel popcorn my grandma needed my grandpa’s height and long arms to reach into the bag and stir while she poured the caramel mixture in. She also realized she needed more than just her 2 hands to have any sort of prayer against all of our tiny hands sneaking handfuls of popcorn before it had been drizzled with caramel and then again after the caramel coating was on and before it was cool enough not to burn us. Despite their best efforts, we inevitably managed to snag a few pieces here and there and the sweet stickiness of just cooked caramel was well worth the impatient wait!!!

Maybe you’re a grandma reading this and looking to spoil grandkids with a sweet treat. Or maybe you’re a mom wanting to make special memories by letting your kids “help” like we helped our grandparents. Or, maybe you’re just a lover of popcorn and/or sweets. Regardless, I hope you try and love this simple recipe and take a trip down your own Nostalgia Lane of happy memories!

Microwave Caramel Popcorn

  • Servings: Approximately 12

This is a deliciously simple recipe perfect for snacking on any time!

Ingredients

-7 quarts plain popped popcorn (for those of you challenged with measurements like me this is 28 cups or enough to fill almost half a regular size brown paper grocery bag)

-1 stick butter

-1 cup brown sugar

-1/4 cup light corn syrup

-1 teaspoon baking soda

-1/2 teaspoon vanilla extract

Ingredients

Directions

1) Pop enough popcorn to fill the regular grocery size brown paper bag almost halfway and set aside.

2) In microwaveable bowl combine the stick of butter, brown sugar, and light corn syrup. Microwave 90 seconds or until you see it start to boil.

3) Remove bowl from microwave and stir to combine then place back in microwave for another 90 seconds.

4) Remove bowl again and add in baking soda and vanilla and stir well to combine.

5) Pour caramel mixture from bowl slowly onto the popped popcorn in the brown paper bag, stopping to shake or mix the popcorn mid way through so caramel is distributed evenly.

6) Roll top of bag down and shake well to help caramel mixture coat popcorn then put bag into microwave for 90 seconds.

7) Remove bag from microwave and shake well again then microwave once more for 90 seconds.

8) Spread wax paper on flat surface then slowly pour caramel popcorn from bag onto the wax paper to cool, spreading it out slightly.

9) Let cool, remove any pieces that are too done or any unpopped kernels you notice, pour into serving ware of choice and enjoy!

This is the seasoned-with-love-over-40-years-crank-style popcorn maker used by my mom. You seriously can’t find things like this anymore, believe me when I say I tried!

Oh yeah, this is yet another health-conscious recipe 😉 It’s worth it though, trust me on that!

That’s the stuff right there! I think around a quarter of each batch disappears during the cooling period when it’s in plain sight on my kitchen counter…Lord, please grant me strength & self-control 😉
